I’ve been feeling a bit guilty because things have been light on the recipe posts of late. Mostly I’ve been channeling my free time into writing and developing new materials for the re-launch of Eat, Recycle, Repeat on Tuesday, September 18th! In the meantime, I’ve been eating pretty much the same thing, or making food from other bloggers. I’m going to post some Simple Summer Foods on Friday, as it’s still hot here and I’m still pressed for time. It will be an End of Summer Celebration! I’m all about doing things the unconventional way. Not that I purposely try to be contrarian, but I like to do things not because some group decided they were good for me, but because they feel good or right. Normal is boring.
Crockpots in the summer. Caveman food. Nobody said unconventional wasn’t delicious.
I thought it might be charming to include a male blogger in our gluten-free share fest. George, the genius behind Civilized Caveman Cooking Creations, is so much more than what meets the eye. His recipes are innovative; his photos are gorgeous; and he is one of the kindest and most good-hearted bloggers out there. And did I mention that his recipes are AMAZING?!
George has some of the most incredible butternut squash recipes, make-your-own nut butters, lara bars*, and coffee-house treats, but his crockpot recipes are my favorite. I’m always lamenting that not enough people use their slow cookers in the summer! It’s a great way to cook food that doesn’t heat up your kitchen like fire & brimstone, and when it’s 86 degrees in your apartment, every little bit counts.
I’ve made several variations of all of Civilized Caveman’s crockpot chicken recipes (say that 7 times fast), but my all time favorite is the Honey Dijon Crockpot Chicken. It’s super moist, super tender, and super easy. A great way to spend a summer day NOT worrying about what to cook for dinner. Or a busy back to school day. Or work day. Or any day.
