I’ve come to the conclusion that people like your blog more when there is dessert. This is slightly sad for someone who spends most of their time avoiding sugar and whose normal dessert is half a roasted sweet potato.
BUT, once a week I enjoy some chocolate pudding. Three ingredients, no fuss, pure, velvety, smooth chocolate glory. I wanted to call this a no-recipe recipe, because I usually just eyeball things and throw them into the food processor. And also it is the same formula from my post Snak Pack Smackdown. However, I realized that most people, unlike me, do not throw things into a food processor and hope for the best. Or add spices willy-nilly “because why not?”. So I sat down and measured, MEASURED things, people. Craziness.
This makes a very large serving. I tend to have a generous portion and then save a wee bit to spread on a sweet potato the next day. Last week I went crazy and put some pomegranate seeds on top, but I’m eating it right now as is and it is wonderful that way too.
1/2 cup mashed avocado
1/4 cup coconut milk cream (the thick part of canned coconut milk)
2 T cocoa powder
Combine ingredients in a food processor or blender and run til completely smooth.
