Roast onions. Add cinnamon. Enjoy paroxyms of caramelized delight.
My friend once told me that onions are the perfect food. I never really understood where she was coming from until I stopped thinking of onions as a supporting player, a background flavor for other dishes, and allowed their natural sweetness and brilliance to shine by roasting.
I can run a train on a panful of roasted onions. I think I’ve been eating 3 onions a day, maybe more, but since I’m trying to eat 9 cups of vegetables every day I could care less. They’re delicious; they’re sweet, warm & spicy, and I can eat a whole pan without feeling bad.
Onions really are the perfect food. Just try it and you’ll be anticipating roasted onions all day long too.
Cinnamon Roasted Onions
4 medium onions
1 t cinnamon
Chop onions into equal slices, about a 1/4 of an inch thick.
Lay out evenly onto one pan lined with parchment paper.
Roast at 425 degrees F for 45 – 60 minutes, until onions have shrunk in size and are a caramelized golden brown.
Allow to cool for 10 minutes. Sprinkle with cinnamon and enjoy!
I am drawn to your blog for a few reasons. First, you tell a great story. Your writing is easy to read, a healthy mix of humor, sensitivity, and description, and I feel like I'm there in the kitchen with you. This is combined with my second reason - your photography is fantastic and goes hand in hand with your words. Third, I love Japanese culture and miss Japan, so seeing certain things here and there relating to Japanese culture is fun to be a part of (see reason #1). And finally, your intent of the blog - treating yourself and the planet with respect - is something I can relate to. - John
"Thank you for putting so much time and energy into your blog and thank you for being you and being honest. Every time I read a new post it brings me joy, not only because your writing is excellent, but also because it destroys my feelings of isolation in the world of food/lifestyles and making life changes. Big up to you! Also, I randomly met a friend of a friend this past weekend with similar diet issues and she was absolutely thrilled to hear about some of your recipes and your blog,"
